Las Cruces, New Mexico is the home to our Western hemisphere capsicum program, processing capsicums grown in our U.S. and Peru growing operations. Together with our substantial growing and processing capabilities in India, Olam SVI provides year-round supply of capsicum products.

Our Las Cruces Kosher and Halal-certified capsicum dehydration and processing facility is fed by our full-oversight contract farming operations in the Southwestern U.S and Peru, and has rich customization capabilities to meet customer needs for color, heat and flavor, including caramelization, dark/light roasts, and custom blends. Las Cruces also employ Olam SVI’s proprietary processes to reduce pathogens, and has an on-site testing lab with superior analytical capabilities to ensure product quality, safety and integrity.

Vietnam is a critical component to Olam SVI’s spice program, serving as a key sourcing origin for black pepper, white pepper, cassia and ginger, and boasting world-class processing operations – the largest in Vietnam. A showcase of processing capabilities and efficiency, Olam SVI’s facilities in Vietnam offer state-of-the-art cleaning, sterilization, grinding, missing and heat treatment capability, featuring inline steam sterilization and wet and dry decortication. Our cryogene milling capabilities retain volatile oils, the key to spice flavor and pungency.

Olam SVI tests 100% of our product before leaving our Kosher and Halal-certified facility ensuring product quality, safety and integrity.

In the Ba Ria-Vung province of Vietnam, Olam SVI worked with a pilot group of 98 farmers to produce on of the world's first Rainforest Alliance-certified black pepper supply chains. Farmers were supported to apply Sustainable Agriculture Standards (SAS), developed by the Sustainable Agriculture Network (SAN) to generate ecological, social and economic benefits and market access.

Olam SVI has been deeply involved with India in the sourcing and processing of Red Pepper (Indian Chilies), Chili Pepper, and other spices and spice blends.

Olam SVI partners with Indian farmers with a unique bilateral engagement program that provides Indian program participants a premium on market value for their products. Anchored by 52 Olam employees, the program offers specialized training for organizers, field assistants and farmers. This training improves yields, reduces inputs and results in complete records and documentation of every farmer’s crop and post-harvest practices. Over 900 farmers and 4,000 acres are under this program. As a result of the program Costs have declined for Indian farmers by 15%, pesticide inputs are down 30% and average crop yields are up by 10%.

Olam SVI’s facility in Fernley, Nevada is the world’s only garlic and onion dehydration facility utilizing direct geothermal power. Naturally occurring superheated steam is drawn up from tube wells and used to dry the garlic and onion, reducing natural gas usage and dehydration cost significantly. After dehydration, the water is poured back into the ground, thereby ensuring no depletion of the water table and maintaining the natural balance of the ecosystem. The Fernley facility is Kosher and Halal-certified, offers a broad range of blending, toasting and customized specification capabilities and employs a proprietary hot water treatment to reduce pathogens.
